Vegan Banana Oatmeal Cookies with Kithul Jaggery



Easy to make, healthy, and naturally sweetened with kithul jaggery!

Ingredients:

- 2 ripe bananas (mashed)

- 1 cup rolled oats

- 2 tbsp kithul jaggery (grated or melted)

- 1/4 cup coconut oil (melted)

- 1/4 cup unsweetened almond milk (or any plant-based milk)

- 1/2 tsp vanilla extract

- 1/2 tsp cinnamon powder

- 1/4 cup raisins or chopped dates (optional)

- 1/4 cup chopped nuts (optional)

                                                                - Pinch of salt



1. **Preheat the oven** to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a mixing bowl, mash the bananas until smooth.

3. Add the melted coconut oil, kithul jaggery, almond milk, and vanilla extract to the mashed bananas and stir well.

4. In a separate bowl, mix the rolled oats, cinnamon, and a pinch of salt. Combine the wet ingredients with the dry ingredients.

5. If desired, fold in raisins, dates, or chopped nuts for added flavor and texture.

6. Drop spoonfuls of the dough onto the prepared baking sheet, flattening them slightly with a fork.

7. **Bake** for 12-15 minutes, or until the cookies are golden and set.

8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
